Last week, following an AI breakfast event at which I was a speaker, I had an engaging conversation with the owner of an online wine business. He was keen to explore the idea of developing AI-powered customer service representatives that could integrate with his wine database. His vision was to create a virtual experience for customers that would mirror the journey of walking into a physical wine store and requesting a nice oaky Chardonnay within the $30 price range. By analysing past purchase data, retailers could suggest wines that customers are likely to enjoy, thus improving the shopping experience and driving sales.

Wine and its consumption are deep-rooted traditions in New Zealand and Australia, which piqued my curiosity about the application of AI in the wine sector. As a result, I've been immersing myself in the captivating world of wine and have uncovered some intriguing developments. Lo and behold, the vineyards have been touched by the magic of AI. So, I invite you to pour yourself a glass of your preferred wine, settle in comfortably, and join me on a journey to discover how AI is revolutionising the wine industry (*This is probably only pertinent if you're reading this after midday.)

As mentioned above, let's start with the most relatable aspect - choosing the perfect bottle. Remember those days when we'd find ourselves lost in a sea of wine jargon, trying to decode the perfect bottle for dinner? Well, that's where AI steps in. Take apps like Sippd and FinpåVin, for example. They use AI to analyse our wine preferences based on a simple quiz. The apps then recommend personalised wines, ranked by how closely they match our tastes. The more we use the app, the more it learns about our preferences, refining its recommendations over time. It's like having a personal sommelier in your pocket!

But the AI innovation doesn't stop there. Winemakers are using AI to optimise their production process and make better wines. They are deploying machine learning algorithms to analyse data from their vineyards – including weather conditions, soil composition, and grape characteristics – to predict optimal harvest times. This means they can pick grapes at the peak of their ripeness, leading to better quality wines.

AI is also helping winemakers control the fermentation process. By continuously monitoring parameters like temperature and sugar levels, AI algorithms can make real-time adjustments to ensure the wine develops the desired flavour profile.

Of course, AI is not a magical solution for everything. It's a tool, and like any tool, its effectiveness depends on how it's used. There are critics who argue that taste and smell – two of the most critical aspects of wine appreciation – are highly personal and can't be reduced to data points in an algorithm. They argue that while AI can provide guidance, it's ultimately up to us to explore and trust our own senses.

Regardless if you favour classic methods or are an avid follower of tech advancements, it's impossible to ignore the profound influence AI has on the wine industry. It aids in the exploration of new wine varieties, supports winemakers in crafting superior products, and transforms the way we shop for wine. If only AI could miraculously find Chablis Grand Cru for the price of Cask Wine - a dream that will always remain tantalisingly out of reach.
